Overnight Breakfast Oats
For anyone that hasn’t been introduced to overnight oats. This is such a great healthy breakfast that you make the night before. May be we should call them make them “The night before oats.”
We made ours with a little agave and sugar free Alpro yogurt.
Fideua (Pasta Paella)
Fideua is basically Paella made with Pasta, I’ve been working on this for a while and to be honest it a better dish to veganise than Paella. The thin angel hair pasta more readily absorbs the flavours from the olive oil, saffron and smoked sweet paprika. I think it's down to the toasting of the pasta in olive oil. It’s also quicker than paella to cook and can be finished or even reheated in the oven.
Easy Vegan Koftas
These Kofta’s are made with brown lentils and exceedingly healthy. Packed with flavour, fantastic with roti and make an amazing wrap for lunch.
The Mixture Keeps in the fridge for upto 5 days and can be frozen.
Wild Mushrooms On Toast
Wild Mushrooms with miso, spinach, avocado griddled garlic sour dough and hummus. Mushrooms on toast is not a new thing, in fact, it's part of classical French Cuisine. This vegan recipe has a lot going on in the flavour department and really packs a punch, yet maintains its self squarely in the healthy breakfast department.

Bibimbap literally translates as mixed rice and is a fantastic method of cooking a healthy dinner or lunch.
This recipe is very flexible, as you can use almost any veggies you have in your fridge. Gochujang is a must for this recipe, the chilli paste is spicy and pungent and makes the dish. Optionally serve with Kimchi. I like lots of different flavours so items can be omitted or added as you require.
Lemon Polenta Cake
This Plant-based cake is fantastic with vegan sour cream or yogurt and keeps for up to a week in an airtight container.
I have always liked polenta cake from the very first time I watched my old head chef make it. So making a vegan version was something that I’ve been meaning to do for a while. It’s very easy to make and even for people that tend to shy away from baking.
