I have always liked polenta cake from the very first time I watched my old head chef make it. So making a vegan version was something that I’ve been meaning to do for a while. It’s very easy to make and even for people that tend to shy away from baking.

Baklava with pistachios and lemon
This heavenly vegan Baklava combines syrup-soaked layers of flaky filo pastry with chopped Pistachios and zesty lemon. It’s a great make-ahead dessert perfect for the holidays and lunch boxes and definitely in our top 10 vegan cakes.
