Fideua (Pasta Paella)
Fideua is basically Paella made with Pasta, I’ve been working on this for a while and to be honest it a better dish to veganise than Paella. The thin angel hair pasta more readily absorbs the flavours from the olive oil, saffron and smoked sweet paprika. I think it's down to the toasting of the pasta in olive oil. It’s also quicker than paella to cook and can be finished or even reheated in the oven.

Bibimbap literally translates as mixed rice and is a fantastic method of cooking a healthy dinner or lunch.
This recipe is very flexible, as you can use almost any veggies you have in your fridge. Gochujang is a must for this recipe, the chilli paste is spicy and pungent and makes the dish. Optionally serve with Kimchi. I like lots of different flavours so items can be omitted or added as you require.

If you need something light and clean with a sauce to change the spice level for individual tastes, this is the dish for you. Packed with Asian flavours, fresh vegetables, crispy tofu and udon noodles.
Indonesian Jungle Curry
This curry is very popular in cafe’s and restaurants and is usually made with chicken or pork.
This vegan version is made with crispy tofu, sweet potato and toasted cashew nuts.

We love this dish, packed with flavour with a touch of pungent heat. it's really Healthy comfort food and yes we used those 2 words together in the same sentence.

Pumpkin is not used very often in the UK so we thought we’d come up with a recipe that not only works but is super delicious too.
This was made with a pumpkin purchased the day after halloween for just 40 pence.
