Korean Fried Tofu
Crispy tofu in a spicy Korean Gochujang Sauce.
This is a great Friday night go to which you can prepare in advance.
Make it as spicy as you like by increasing or decreasing the amount of Gochujang.
I use the the word crispy sparingly when describing recipes, as it’s used far to often to describe tofu that, well just isn’t crispy.
I can honestly say however, that by following the technique below, you will have crispy tofu you can use in a variety of dishes. Preparing the tofu is key to obtain a crispy and slightly crumbly texture, method below.

Fideua (Pasta Paella)
Fideua is basically Paella made with Pasta, I’ve been working on this for a while and to be honest it a better dish to veganise than Paella. The thin angel hair pasta more readily absorbs the flavours from the olive oil, saffron and smoked sweet paprika. I think it's down to the toasting of the pasta in olive oil. It’s also quicker than paella to cook and can be finished or even reheated in the oven.

Korean Bibimbap
Korean style rice bowl with tofu and Gochujang.
Bibimbap literally translates as mixed rice and is a fantastic method of cooking a healthy dinner or lunch.
This recipe is very flexible, as you can use almost any veggies you have in your fridge. Gochujang is a must for this recipe, the chilli paste is spicy and pungent and makes the dish. Optionally serve with Kimchi. I like lots of different flavours so items can be omitted or added as you require.
