Introduction

These Kofta’s are made with brown lentils and are exceedingly healthy. Packed with flavour, fantastic with roti and make an amazing wrap for lunch.
The Mixture Keeps in the fridge for upto 5 days and can be frozen.

Steps

Method:

Cook your brown lentils as per the packet instructions. (they need to be soft)

Drain and allow too cool, the drier they are the better.

Add all the other ingredients except the flour and mix thoroughly.

Season to taste.

Adjust as necessary.

mix in the flour. The mixture should to dry enough to form balls and hold their shape.

Roll the mixture into small balls.

Add a little oil to a hot pan, add the kofta balls a few at a time and lightly brown on all sides.

Place on kitchen towel to drain.

Serve with yogurt raita, roti or chapatis.


Note : you can use other types of lentils, however brown lentils give you a better texture and make a fantastic carrier for the spices.

Ingredients

500g brown lentils

3Tbsp Garam Masala

2tsp ground coriander

1tsp ground cumin

1 & 1/2 tsp ground ginger

1 & 1/2 tsp mild chilli powder

4Tbsp gluten free flour to bind it (not chickpea)

1 handful of fresh chopped coriander

Salt to taste.
