These light and delicious cookies are best served in pairs, because frankly one is never enough.

Ginger Biscuits


Put the flour, ginger, cinnamon, and Bicarb in a bowl and lightly mix.

Stir in the butter and sugar.

Warm the golden syrup in the microwave or over a bowl of hot water.

Add to the mixture and gently bring together by hand to form a soft dough (do not over mix)

Use a tablespoon of dough to make balls  and place on a baking tray 2 '' apart.

Press down slightly.

Cook at 160C (fan oven) 180C (non fan) for 9-11 minutes.

Allow to cool on the tray for 10 minutes before transferring to a cooling rack. 


225g self-raising flour

1tsp Bicarb

2tsp ginger

1tsp cinnamon

100g light brown sugar

125g melted plant-based butter

100g golden syrup
