Introduction

This luxury granola will keep in an airtight container for up to 2 weeks.
Great served with thick vegan yogurt and fresh berries and little honey flavoured agave or maple syrup.

Goji Berry Granola

Steps

Preheat the oven to 160C

Mix all the dry ingredients together in a large mixing bowl

Mix all the wet ingredients together in either a bowl or a jug

Add the too together and mix with a wooden spoon

Line 2 large baking trays with grease proof paper and thinly spread the granola mixture onto both trays.

Bake for 10 minutes remove from the oven stir mixture and bake for a further 10 minutes

Remove from the oven and allow to cool

Add the remaining fruit and Chai seeds.

Serve with yogurt, fruit compote or your favourite plant-based milk.

Ingredients

Dry mix

200g organic oats

30g plain puffed rice

45g puffed quinoa

35g shredded coconut

75g pumpkin seeds

40g light brown sugar

1Tbsp cinnamon


Wet mix

60ml melted coconut oil

60ml maple syrup

60ml smooth natural peanut butter.

2tsp vanilla extract

¾ tsp sea salt


Add after baking

25g Chia seeds

40g dried apple

40g dried cranberries

30g goji berries
