
Kofta Burger with Raita & onion Bhaji

Introduction
This is our favourite burger and is packed with flavours and texture.

Steps
To make the burgers
Cook the brown lentils until soft, but not mushy
Drain well and spread on a tray to allow to dry and cool
Place the lentils in a mixing bowl and add the rest of the ingredients except the flour
Mix thoroughly
Add the flour to bind the burger mixture together
Refrigerate for 20 minutes to allow the mixture to rest
Add more gluten free flour if the mixture is too wet
Preheat your oven to 180C
Form into 6 burger sized patties
Cook in a medium hot pan with a little oil, until lightly browned on both sides.
Place all the burgers onto a lined baking sheet and cook in the oven for 7 minutes
To make the raita
Squeeze as much water out of the grated cucumber as possible in your hands or in a clean cloth
Pick the mint leaves from the stem and chop with a knife
Combine with the yoghurt and cucumber
heat your onion bhaji's as per the instructions
when hot flatten slightly with a spoon
Build your burgers.
The Burger mixture will freeze, but you may need to add a touch more flour when you defrost.
Ingredients
For the burger
250g dried brown lentils
1&1/2 Tbsp garam masala
1tsp ground cumin
2tsp ground coriander
1tsp grated fresh ginger
1/2tsp mild chili powder
1 tin black beans drained
50g fresh coriander (chopped)
3Tbsp gluten free flour
For the Raita for 6
250g Greek style vegan yogurt
1/2 a cucumber grated
a sprig of garden mint
Garnish
6 Vegan Brioche buns or buns of your choice
Sliced tomato
lettuce
one pack of onion bhajis
Mango Chutney
