Peanut butter, bean & vegetable stew

If you need something warm and comforting this is just the thing.
We really love this dish, and it's one of our gotos for cold and gloomy winter days.

Peanut butter, bean & vegetable stew


Heat a large pan, add the onion and cook until soft.

Add the garlic, ginger and chilli, cumin and cardamon and cook for a further 2 minutes.

Add the veg stock, peanut butter, tomato puree, maple syrup, lime juice, sweet potato, butternut squash, butter beans and chickpeas.

Cook for 20 minutes or until soft.

Add  the kale and spinach simmer for 2 minutes.

Serve with rice or oven-roasted potato wedges.



1Tbsp oil

1Lrg onion chopped

3 cloves of garlic crushed

1Tbsp ginger grated

1/2 red chilli

2tsp cumin powder

1/2tsp cardamon

5 cups of veg stock

3/4 cup peanut butter

175g tomato puree

1Tbsp maple syrup

1 lime juiced

500g sweet potato peeled and diced

500g butternut squash peeled and diced

200g kale washed and chopped

100g baby spinach

1 tin chickpeas drained and washed

2 tins butter beans drained and washed

Salt and pepper for seasoning
