Sweet and Sour Crispy Tofu Balls with fried rice

To make the sauce

Put all the ingredients in a pan

Stir and bring to a boil

Turn down the heat and simmer for 5 minutes

Add to the sauce and stir until thickened.

To cook the rice

Add the oil to a hot non-stick frying pan or wok on a high heat

Add the spring onions and cook for 1 minute

Add the rice and peas and fry for 8-10 minutes to allow the rice to dry

Stir to avoid sticking.

Add the soy sauce and continue to fry for another 1 minute

Remove from the heat and add the sesame oil.

To cook the Tofu Balls

Cut the tofu into cubes or break it up with your hands, lightly season with a little salt

Heat a pan of oil or a deep fat fryer to 180C

In a bowl, mix the cornflour, plain flour, bicarb and salt

Add water a little at a time until you have a smooth batter

Coat each piece of tofu in the batter and fry in small batches until golden brown
